120 ml water
150 g of flour
Mix the egg, water and flour together to make a light batter.
Slice the aubergine quite thinly and dip into the batter.
Deep fry in hot oil immediately, until the batter is golden brown.
Eat alone, or serve with a chilli dipping sauce.
