West Lakes Organic Meats is based at a small, family run organic farm near Cockermouth in Cumbria. We supply our own meats and those produced on another Cumbrian organic farm - Mansergh Hall near Kendal.

The meat is supplied by free home delivery and also by mail order.

BEEF
Our beef comes from a mixture of Galloway, Limousin and Aberdeen Angus stock. It is hung for a minimum of 21 days to improve tenderness and flavour.

LAMB/SHEARLING
Our lambs are mainly Border Leicester/Texel crosses. Most lambs are fattened on grass and haylage only. They live outside all year round and become shearlings when their first fleece is removed at 14 months old. To improve tenderness, the lamb is hung for 8 days.

MUTTON
The mutton comes from female sheep which are between 3 and 5 years old. It is matured for 2 weeks.

PORK
The free range, organically reared, rare breed pork comes from Mansergh Hall, near Kendal. It is produced from a variety of pig breeds, including Large Black, Gloucester Old Spot, Saddleback and Large White/Welsh cross. It is matured for about one week.

All our livestock is managed to full organic standards. Using the nearest organically licenced butcher and abattoir, however, currently involves a round trip of more than 100 miles. We therefore prefer to use the nearest abattoir at Wigton and a local butcher to prepare and package our lamb and beef.

We believe this is better in terms of animal welfare, fuel consumption and meat prices. This means that while our cattle and sheep have organic status, the meat we supply from them does not. Please ask if you require any further information about this.
