Croustillant de pommes en brochette de vanille

Serves 4

Ingredients
4 apples,
3 sheets of puff pastry,
80g caster sugar,
10g icing sugar,
20g A.O.C. Isigny butter,
4cl calvados,
30g A.O.C. Isigny crème-fraiche,
20cl single cream,
4 vanilla pods,
2 passion fruits,
Ground cinnamon,
Clear honey

Preparation
Peel, core and quarter the apples, fry them in a little butter adding the sugar and cinnamon. When caramelised, de-glaze with the calvados.

Brush the sheets of pastry with the melted butter, cut into triangles (3 per person) add a little of the drained apple mixture to each and close. Then skewer them onto the de-seeded vanilla pods.

Mix the crème fraiche with the seeds from the vanilla pods and the syrup from the cooked apples

Put the pastry skewers into the oven and cook.
Cut the passion fruits in half and place a spoonful of crème fraiche and an apple quarter on each.

Arrange on each plate, the skewers, the passion fruit and crème fraiche, then drizzle honey over the skewers and dust with icing sugar.
